This traditional method sparkling wine is made from 100% Pecorino grapes grown at 90 meters a.s.l. and at 180 meters a.s.l. with north- northeastern exposure, carefully selected to give the acidity and sapidity necessary for a good sparkling wine. After soft-pressing and destemming of the grapes, the must is clarified and fermented under temperature-controlled conditions. In the glass, the brut is densely aromatic and sustained by fine and continuous perlage and excellent fragrance with notes of citron, yellow peach, pineapple, and sweet bread (pan brioche). In the mouth, the flavor is intense and full bodied with balanced sapidity and freshness. The effervescence is accented by a faint citrusy note and a savory finish.
