At altitudes of 90 and 180 meters a.s.l. in cobbly soils, the vines are grown with the typical Abruzzo pergola training system. The carefully selected parcels of Montepulciano d’Abruzzo (vinified as rosato or red) produce basic wines with a rich and complex bouquet. After soft-pressing and temperature-controlled fermentation, the prise de mousse takes place in the bottle, where the wine rests of the lees for at least 24 months. This brut has a luminous, seductive color, like dried onion skin, and a bou- quet featuring notes of wild strawberry and mandarin orange. The taste is quite coherent and inviting, with delicate notes of orange and sweet liquorice tending to prevail, carried aloft by the perlage. The taste is mellow and creamy, exalted on the palate by a fresh and savory structure. Its long finish is characterized by notes of aromatic herbs.
